Now we are two weeks in and things could go horribly wrong and all the remainers be proved correct but as yet I haven't had a problem getting fresh food and I haven't seen a any price increases. How long did it take to clear up Dover once the testing was in place - a day/two and have we had any repeats since?

The 40 years of peace and prosperity were plenty evidence for me. Not quite sure what else you were looking for?! The state of Britain before we joined compared to now was a perfectly simple indication of how we have prospered.
"Plenty of lies were told on both side". Sigh. Every single primary claim of the Leave side has been proven wrong. Every single one. The Remain side? Not so much.
As for Dover, do you have any idea of the degree to which trade through the port has collapsed since the 1st January?? If nobody is coming you won't have any queues.
I assume it will pick up again - we can but hope - and then we'll see how it copes.
